DCCC Thumbprint Cookies

This delightful little cookie is a colorful addition to a dessert tray. The addition of dry curd cottage cheese makes the cookie super light and crisp.

Makes: 24 cookies

1 cup blanched almond flour

1/4 cup (1/2 stick) unsalted butter, cut into cubes

2 tablespoons dry curd cottage cheese (DCCC)

1 tablespoon honey

1/4 cup SCD-friendly fruit jam*

Preheat the oven to 350°F. Line two baking sheets with parchment paper.

In a bowl, mix together the flour, butter, DCCC, and honey. Spoon tablespoon-size circles of dough onto the parchment paper, leaving about 1-1/2 inches between cookies to allow them to spread. Form a small divot in the center of each cookie, and fill it with the fruit jam.

Bake for 10 to 12 minutes, or until the edges begin to brown. Allow the cookies to cool on the baking sheet. Store at room temperature in an airtight container for up to one week or frozen for up to three months.

EGG-FREE

*SCD-friendly jam is made with honey and is free of pectin. They may contain a small amount of gelatin to help the fruit set up, in place of pectin.
